Crunchy Choc Goji Granola
1.5 cups of rolled oats
1/2 cup of raw buckwheat groats
1/2 cup of PSF goji berries
1/4 cup of pumpkin seeds
1/4 cup of sunflower seeds
1/4 cup of Power Super Foods Cacao Nibs (optional)
1/2 cup of rice malt syrup
3 tbsp of Power Super Foods Cacao Powder
1 tsp of Power Super Foods Maca Powder (optional)
1 tsp of vanilla
Preheat the oven to 150°C.
Mix the oats, buckwheat, goji berries, seeds and nibs in a bowl.
In a small saucepan, mix the rice malt syrup, cacao powder and vanilla and heat until syrupy, stirring constantly.
Pour the wet into the dry, mix until fully combined and sticky.
Pour onto a baking tray, press down, and bake for 20-25 minutes.
It will still be soft upon coming out of the oven, but leave to cool and it will harden up into tasty chunks.
Break into chunks and store in an airtight jar or container.
