Fa la la la luscious and utterly mouth wateringly choco-licious vegan magnums with a gorgeously gooey raspberry centre. The only treat you really need for a Summer Christmas.
Ingredients

2 cups of overnight soaked cashews

1/2 cup Power Super Foods Cacao Powder

2 Tbsp of Power Super Foods coconut sugar
-
1 Tbsp orange zest
-
1 Tbsp coconut cream (top part of the can – refrigerated helps)

1 cup coconut milk
-
1 cup of fresh raspberries (or frozen)

1 tablespoon of Power Super Foods Coconut Sugar

1 lime juice
-
Melted chocolate drops with 1 tsp of coconut oil.
Use melted dark chocolate or make your own with Cacao Powder + Cacao Butter + a liquid sweetener

Raspberry Coulis
Chocolate Coating
Method
Fill the ice cream moulds and freeze for 1 hour.
Mash coulis ingredients.
Add the raspberry layer on top.
Return to freezer overnight.
Dip the frozen ice cream in melted chocolate
