Ingredients

1 small bunch tuscan kale

2-3 tbsp fresh mint leaves, roughly chopped

1/4 cup freshly squeezed lemon juice

2 tbsp organic truffle oil
-
20 grams parmesan cheese, grated

1/4 tsp salt
-
1/8 tsp pepper
-
1 avocado, to serve
-
1 small handful PSF Dulse Leaf, to serve
Method
Place chopped kale and mint in a large mixing bowl.
In a seperate bowl, combine lemon juice, truffle oil, salt and pepper and mix well.
Mix the dressing through the kale and then stir through grated parmesan cheese.
Top with Power Super Foods Dulse Leaf and sliced avocado, serve and enjoy.
