Super Power Bars
Energising bars that pack a nutritional punch to bring out your super powers. Chock full of nuts and seeds including Chia; Tigernut Flakes for prebiotic fibre and beneficial nutrients, and Goji Berries, Goldenberries and Cacao Nibs for antioxidants, vitamins and minerals.
Satisfying and delicious and suitable for any snack attack occasion.
½ cup chopped roasted nuts eg pecans, peanuts, almonds
1 cup Power Super Foods Tigernut Flakes
2 & ¼ cups puffed cereals eg quinoa, millet, brown rice, amaranth
3 Tbsp pepitas
½ cup Power Super Foods Goldenberries roughly chopped or Crunchy Goldenberries
¼ cup Power Super Foods Goji Berries
3 Tbsp Power Super Foods Cacao Crunch or Power Super Foods Cacao Nibs
1 tsp cinnamon
¼ tsp salt
½ cup brown rice syrup
½ cup almond or peanut butter
1tsp vanilla extract
1 tbsp maple syrup
Optional : 1 tbsp Power Super Foods Maca Powder
2 Tbsp Power Super Foods Chia Seeds
Line a tin with two pieces of baking paper leaving some paper with handles for easy removal later.
Mix dry ingredients in a bowl.
Combine brown rice syrup and nut butter in a saucepan and heat gently to combine and soften. Add in vanilla and maple syrup.
Add wet nut butter mixture to dry and stir thoroughly until dry ingredients are coated. Mixture will be very thick and sticky.
Push mixture into the lined tin and press down. Use a rolling pin or glass jar with paper to get an even top.
Place in freezer for about 20 minutes to set.
Slice into bars while cold with a sharp knife or pizza cutter.
Store covered in fridge for up to two weeks or the freezer for a month and bring to room temperature to consume.
