Lightly grease a waffle machine with coconut or olive oil.
In a bowl, combine the tigernut flour, gluten free baking flour and coconut together. Mix well.
Make a well in the flour mix and add the coconut oil and coconut milk. Stir to combine.
Slowly add the water until you have a thick batter, similar to pancakes.
Spoon the mixture into the waffle maker (makes 4 waffles).
Set the waffle iron to a medium heat and cook as per iron instructions. They should be lightly golden and moist in the middle.
Serve immediately, topped with fresh fruit, flaked coconut and your favourite syrup.
