Zesty Chocolate Magnums
These to die for plant based magnums whipped up by@littlekalegirl have a sweet zesty filling made with nutritional superberries Lucuma Powder and Camu Camu Powder blended with passionfruit and lemon. Lucuma is low GI and naturally sweet and Camu Camu is a zingy berry super high in vitamin C.
1 cup of overnight soaked cashew nuts (drained and rinsed)
1 teaspoon Power Super Foods Camu Camu Powder
1/3 cup Power Super Foods Lucuma Powder
1/2 cup lemon juice
1 teaspoon lemon zest
1/4 cup maple syrup
1 tablespoons of thick part of coconut milk (refrigerate can overnight)
1 & 1/2 cup coconut milk
Lucuma Cacao Nibs
To sprinkle on finished magnum
Blend ingredients until smooth
Place in ice cream moulds and freeze for at least 3 hours.
Once frozen, dip in melted chocolate – good quality dark chocolate chips gently melted with a teaspoon of coconut oil
