These pop in your mouth delectable little caramels are a mini healthy treat made with our Lucuma Powder for low GI natural caramelly sweetness, Maca Powder for sustained energy and balance and cacao butter for good healthy fats and antioxidants.
Power Super Foods
100g Power Super Foods Cacao Butter
4 tbsp Power Super foods Lucuma Powder
1 heaped tbsp Maca Powder – we used Gelatinised
but raw works well too
1 tbsp maple syrup (or less if avoiding sugars)
1 tsp vanilla extract
pinch good quality mineral salt
Melt cacao butter pieces gently over simmering
water
Whisk in the maca powder, lucuma powder,
vanilla, salt and maple syrup until mixture is smooth and glossy. Allow to cool
at room temperature for about 5 minutes.
Once cooled slightly, whisk thoroughly to avoid
the cacao butter separating. Transfer to a pouring jug and fill silicon moulds.
We used bite sized chocolate bonbon moulds.
Place filled silicon mould onto a plate in the
freezer for 1 hour or until fully set.
Remove from freezer for ten minutes then
carefully release from the mould.
Consume at fridge or room temperature . . . if
you can wait that long.
