Power Super Foods
5 tbsp Peanut butter
2 tbsp tamari or soy sauce
2-3 tbsp maple syrup
1 cm fresh ginger
1/2 tsp lemon grass
Juice of half a lime
1 garlic clove
1/2 red chilli
2 tsp Power Super Foods Dulse Flakes
Water
Salt to taste
2 bunches of rice noodles
1 red capsicum cut finely
1/2 mango sliced into thin strips
Red cabbage sliced thinly
1/4 cup edamame beans (cooked)
1 avocado
In a food processor add the peanut butter, tamari, maple syrup, lime juice, lemon grass, garlic, ginger, dulse flakes, chilli and a little water and blitz until you get a smooth and runny consistency adding in a little water at a time to get the smooth consistency.
In a pan, cook your noodles as per the packaging instructions
Add in some of the peanut sauce to the cooked noodles and stir through making sure to coat well, leave some extra sauce to drizzle over at the end.
Add in your edamame beans, peppers, mango and some coriander leaves and mix through.
Plate up the noodles and drizzle over more of the peanut sauce and some sliced avocado, along with a sprinkling of Dulse Flakes
