1¼ cup Power Super Foods Tigernut Flour
½ cup natural, smooth peanut butter
2 tbsp pure maple syrup
2 tbsp coconut oil
1 egg
Pinch of salt
Line a large baking tray with baking paper and pre-heat your oven to 160°C.
Pour the tigernut flour into a large bowl with the salt. Set aside.
In a separate bowl, combine the peanut butter, maple syrup, coconut oil and egg until well combined.
Add the wet mix to the tigernut flour and mix well until a smooth dough has formed.
Take heaped tablespoons of the dough and roll into balls before placing on your tray and pressing the top down slightly with a fork. (Wet your hands with cold water to stop the dough sticking, and dip the fork in flour or coconut oil if it is sticking to the cookies).
Bake at 160°C for 15-20 minutes, or until they start to golden around the edges.
Allow to cool completely before eating.
