White chocolate coated maqui balls

Directions

1. To make the maqui centre, add all of the ingredients to a food processor and blend until smooth, if mix seems too wet to roll into balls, add a little more coconut flour. Roll into balls and set in the freezer while you make the white chocolate.

2. In a double boiler (small saucepan filled with water over medium heat with a larger bowl over the top - without the water touching the bowl) melt the Power Super Foods Cacao Butter until it turns into a liquid, 

3. Add the coconut oil and maple syrup.  
   

4. Once combined, refrigerate for 20 minutes.
   

5. Take the really cold maqui bowls and insert a skewer in the centre, dip the balls into the white chocolate, lay on a tray with baking paper and allow to set in the freezer. Repeat process until all the balls are coated.
