All cacao is not created equal. Our cacao beans are the finest quality criollo cacao beans organically grown on smallholder farms in South America. Our cacao is fairly traded and certified organic with no toxic chemicals, pesticides or GMOs used in cultivation or processing. As an additional step for product purity, we also ensure our cacao beans meet the Australian standards for safe low levels of cadmium. Raw cacao beans are comprised of roughly 50% cacao butter which is cadmium free, ensuring the overall cadmium content is under the Australian regulation. When selecting our cacao we only choose the most delicious and exceptional cacao we can find with a complex flavour profile and superior texture. We think it’s the best cacao in the world.
Peel then eat as is, lightly roast and grind into coffee, or crush into a powder and add to smoothies, ice cream, muffins, muesli, super balls, nut butters, chia pudding, trail mix and baked goods as a healthier substitute for chocolate chips. The outer shells can be eaten or used to make cacao tea.
Cacao beans are the seeds of an Amazonian fruiting tree pod and the source of all chocolate and cocoa/cacao products. Cacao has been grown in humid tropical environments around the equator by ancient cultures such as the Mayans and Aztecs, who believed it increased energy, mental clarity, strength and virility. Highly valued for their many distinct flavour compounds, the brightly coloured seed pods hang from vines like jewels in the jungle, transforming from green, red or purple to orange or yellow as they ripen. Largely consumed by the nobility and used in ceremonies, cacao was, and still is, a valuable commodity today.
