1/2 cup of tapioca pearls
500mls almond milk
2 tbsp maple syrup
1 tsp vanilla essence
1 cup of frozen organic blueberries
1 tbsp Power Super Foods Coconut Sugar
1 tbsp maple syrup
1 tbsp lemon zest
1 tbsp water
1 tbsp Power Super Foods Acai Powder
Soak 1/2 cup tapioca pearls in cold water for 1 hour
Boil on a gentle heat for 12 minutes, continually stirring with almond milk, maple syrup and vanilla essence
Simmer all ingredients (except Acai Powder) on low for 5 minutes
Strain the mixture and then add and stir
1 tablespoon Power Super Foods Açai powder
Add Açai Blueberry syrup to boiled tapioca pearls and mix together to combine
Enjoy with your choice of toppings
