Break up the usual oat routine with Tigernut Flakes and make these summer apricot tigernut crumbles. Just as good for dessert as they are for breakfast, this recipe can be adapted to include any seasonal fruits you like. We’ve also added some antioxidant rich tangy-sweet dried Goldenberries for texture, taste and nutrition. Tigernuts are naturally sweet so sugar can be adjusted according to taste.

We’ve also added some antioxidant rich tangy-sweet dried Goldenberries for texture, taste and nutrition. Tigernuts are naturally sweet so sugar can be adjusted according to taste.
Power Super Foods
6 (300g) of fresh apricots, cut into chunks (can also use rhubarb, peaches or mango)
2 green apples, diced
2 tbsp of Power Super Foods Coconut Sugar
½ a cup of Power Super Foods Goldenberries or Crunchy Goldenberries
1 ½ cups of Power Super Foods Tigernut Flakes
¼ cup of Power Superfoods Coconut Sugar
¼ cup melted coconut oil
Preheat the oven to 180c.
Grease 4 small, or 1 large ramekin with coconut or olive oil.
In a medium saucepan, add the apricot, apple, coconut sugar, goldenberries and about ¼ cup of water.Cook on a medium heat stirring regularly until the apples are tender and the apricots start to fall apart.
To make the crumble topping, mix together the tigernut flakes, coconut sugar and coconut oil in a bowl.
When the fruit is cooked, spoon the mixture, including some of the watery juices, into the ramekins evenly.
Top the fruit mix with an even layer of the Tigernut flake crumble.
Bake in the oven at 180c for 10 minutes, or until the Tigernut crumble is golden and crunchy (you can also place it under a grill, but watch it carefully).
