These chewy little rectangles are nut free, gluten free, satisfying and totally delicious. One of the main ingredients, tigernuts, has twice the fibre of oats and more magnesium than banana. The bars are easily customisable for fussy eaters and perfect for school lunch boxes, the desk drawer and on the go snacking.

These bars are easily customisable for fussy eaters and perfect for school lunch boxes, the desk drawer and on the go snacking.
Power Super Foods
1 cup Power Super Foods Tigernut Flakes
1 cup puffed brown rice
½ cup puffed millet
½ cup roughly chopped Power Super Foods Goldenberries
3 tbsp Cacao Crunch
1 tsp cinnamon powder
¼ tsp salt
1 tsp natural vanilla extract
¼ cup organic sunflower seed butter
½ cup & 2 tbsp brown rice syrup
3 & ½ tbsp Power Super Foods Cacao Powder
30g Power Super Foods Cacao Butter
1 tbsp maple syrup to taste
2 tbsp Power Super Foods chia seeds
¼ cup desiccated coconut
Combine and mix dry ingredients in a bowl.
Gently heat sunflower seed butter with brown rice syrup to combine. Whisk well to blend.
Quickly add to dry mix. The mixture will be difficult and sticky to stir.
Once combined press into a tin lined with 2 pieces of paper for easy removal. Use a rolling pin or jar and paper to make the top even.
Place in freezer for about 15 minutes to cool and set.
Remove and drizzle melted chocolate which should harden.
Slice while cold. Store with paper as they can stick together.
These are sticky at room temperature so best kept in the fridge for a couple of weeks or freezer for up to a month.
