Power Super Foods
1/2 cup buckwheat flour
4 tsp Power Super Foods Beetroot Powder
2 tsp extra virgin olive oil
Pinch of salt
1 tsp maple syrup (optional but not needed)
Approximately 1/3-1/2 cup milk of choice or water
1/2 cup coconut yogurt
2 tsp maple syrup
10 strawberries
In a bowl add the buckwheat flour, Beetroot Powder, salt and maple syrup (optional).
Add milk or water slowly while whisking and add in enough to make a runny crepe batter
Spoon some of the crepe batter into a hot oiled pan and swirl the pan round to make sure the mixture is nice and thin. Cook the crepes one side until cooked and then flip over.
Continue with the rest of the batter mixture.
In a bowl add the yoghurt and maple syrup and mix together. Chop the strawberries into small pieces and mix them through.
Spoon a little of the mixture into each crepe and fold over.
Drizzle with some dark chocolate and don’t forget to dip some strawberries in the dark chocolate and add onto of the crepes!
