Spooky Eyeball Bloody Beetroot Cocktail

Ingredients

  • 1 heaped tsp Power Super Foods Beetroot Powder

  • 2 tsp honey (or sweetener of choice)

  • 60ml ginger syrup or juice

  • 50ml lemon juice

  • Soda Water

  • Ice Cubes - we put Beetroot Powder in ours to make them extra scary

  • White alcoholic spirits - gin, white rum, vodka (optional)

Directions

  1. Mix Beetroot Powder with ¼ cup of water and the honey and heat gently on the stove until well combined. Cool this syrup in the freezer or fridge.

  2. To assemble cocktail, place ice (crushed or whole) in your fanciest glass, add cooled beetroot syrup, lemon juice and ginger syrup and stir to combine.

  3. Top with soda water. Adjust sweetness to taste.

  4. To make freaky eyeballs use a small paring knife to peel away the skin of the radish in a wavy vein like pattern, dig out holes and wedge blueberries inside – it won’t be perfect but it will be creepy. Place in your creepy drink or rested on top using a cocktail toothpick.
