Rich dense fudgy brownies made with teff flour and cacao paste (100% pure solidified cacao) Eat straight away or keep in the freezer for the perfect cold chocolatey snack.
Power Super Foods
150g Power Super Foods Cacao Gold Paste or Cacao Raw Paste Buttons
½ cup coconut oil
2 cups Power Super Foods Coconut Sugar
4 eggs or vegan egg replacer
½ cup Teff Flour
1 tsp good quality flaky salt
2 tsp vanilla extract
Optional: 2 tbsp Cacao Nibs
Preheat oven to 170C
Melt the paste gently in a metal or glass bowl over simmering water
When about half melted add the coconut oil until combined, stirring regularly. Do not overheat
Once melted, remove the luscious glossy liquid from the heat and stir in the Coconut Sugar and salt
Allow to cool slightly, then add the eggs or egg replacer and the vanilla extract
Stir to combine
Fold in teff flour and don’t overmix
For optional crunch add 2 tbsp Power Super Foods cacao nibs
Pour into a lined tin and bake at 170C for 25 minutes (check at 15 mins as ovens vary) until a skewer inserted comes out clean. The brownies should be firm but not dry
Allow to cool and cut into small squares (these are rich so you won’t need big pieces)
Store in fridge and consume within a week (if using eggs) or freeze for longer
Makes about 32 small squares
