Spectacular summer ice creams made with the most special of berries - the elderberry, these delicious magnums are made with Elderberry Powder, strawberries and cherries and coated with a layer of luscious chocolate. Dairy, nut, gluten and refined sugar free they're perfect for summer festivities.
Power Super Foods
500g vanilla coconut yoghurt
3 tbsp maple syrup
2 tbsp Power Super Foods Elderberry Powder
1 & ½ cups strawberries
1 tbsp Power Super Foods Beetroot Powder (or ½ cooked beetroot)
1 cup frozen cherries
3 tbsp maple syrup
½ tsp potato starch
optional cacao powder
optional cacao butter
optional cacao paste
Blend ice cream ingredients in a high speed blender until smooth
Fill up the ice cream moulds leaving space for a cherry layer
Place in the freezer for 2 hours
To make the cherry layer place frozen cherries with maple syrup, 2 tbsp water and potato starch in a small pan on low
Stir until it thickens
Allow the cherry syrup to cool
Place cooled cherry syrup on top of the frozen layer and place in the freezer overnight
Dip the frozen ice cream in melted chocolate (you can make your own chocolate using cacao powder (or cacao paste) and cacao butter with a liquid sweetener
Sprinkle with toppings of choice
Place in the freezer for 5 hours
