Wake up to a different granola using tigernuts instead of oats. Tigernuts are little tubers high in antioxidants, prebiotic fibre for gut health, healthy fats and protein, with a delicious naturally sweet taste similar to almonds and coconut. Tigernuts contain more fibre than oats and most vegetables and fruits as well as magnesium, vitamin E and amino acids.
This granola is a bit chewy with a light crunch, and can be easily adapted to any inclusions and exclusions you like. We’ve added a few additional superfoods like maca and cacao to add a little chocolatey taste and bring some extra morning happiness.

Power Super Foods
2 cups Power Super Foods Crumbled Tigernuts (or Tigernut Flakes)
1/3 cup almonds
1/3 cup pecans
1/3 cup pepitas
1tsp cinnamon
1Tbsp Power Super Foods Chia Seeds
1 heaped tsp Power Super Foods Maca Powder
1 Tbsp Power Super Foods Cacao Powder (use more if you like it really chocolatey)
1tsp vanilla
3 Tbsp brown rice syrup – you could also use maple syrup
3 Tbsp melted coconut oil
Generous pinch of salt
Optional: dessicated coconut or coconut flakes
Mix dry ingredients
Mix wet ingredients
Mix dry ingredients
Pour wet into dry and mix to coat and combine.
Spread mixture evenly onto a lined baking tray.
Bake in a 170 degree oven for 20-25 mins
At about 10 mins turn mixture and press down with the back of spoon so larger clumps can form.
Allow to cool before stirring to maintain some clumps.
Optional: Sprinkle mix with Cacao Crunch or Lucuma Cacao Nibs and Crunchy Goldenberries after it’s cooled
Store in an airtight jar for up to 2 months in the pantry or fridge
