A deliciously colourful and wondrously healthy salad perfect as a side dish or add your choice of protein and make it a main meal. Hand harvested, our goji are organically grown and processed chemical free. They do not contain sulphur dioxide or any other preservatives or colour enhancers often found in conventional dried fruit.
1 large sweet potato, cut into cubes
2 Tbs olive oil
½ tsp Himalayan salt
2 tsp dried thyme
2 tbs Power Super Foods Goji Berries, soaked in water for at least 4hrs
1 tbs olive oil
2 tbs apple cider vinegar
1 tsp coconut cream
Salt and pepper to taste (about ¼ tsp each)
150g curly kale (about half a large bunch), stems removed, torn into pieces (optional: massaged in olive oil)
30g roasted almonds, coarsely chopped
1 Tbsp Power Super Foods Goji Berries
1 orange, cut into slices
Combine the sweet potatoes with the oil, salt and thyme, then transfer to a lined baking tray. Bake for approx. 30 mins at 180°C.
For the dressing drain the goji berries and blend with the oil, vinegar and coconut cream until smooth.
In a large bowl, combine the kale with half of the dressing and massage it in.
Add the sweet potatoes, almonds, goji berries and oranges.
Lastly, drizzle the salad with the rest of the dressing
Serve as a side or add your favourite protein.
