These cookies are gluten free, grain free and vegan

1/2 cup Tigernut Flour
1/2 cups Tigernut Flakes
1/2 cup dessicated coconut
1/2 cup Goldenberries or Crunchy Goldenberries
1/2 cup sliced pitted dates
1/2 cup walnut pieces
1/2 cup Coconut Sugar
1 tsp vanilla extract or 1 large squirt liquid vanilla stevia
Zest from 1/2 orange
2 tbsp melted Cacao Butter
1/3 cup thick coconut or oat milk
Preheat oven or 180℃ if using an oven. Alternately I cook these in my
airfryer.
Add everything up to the orange zest to a large mixing bowl then stir to combine.
Melt the cocoa butter in a small fry pan on medium then add to the dry mix with the milk and stir to create a thick dough.
Roll a small palm full of mix into a ball then flatten slightly and place onto the baking paper lined tray.
Repeat until you use all the mix then bake in the centre of the oven for about 13-14 minutes or until light browned or cook in an air-fryer for 7 minutes or until lightly browned and cooked through.
Allow to cool before enjoying.
