Goldenberries are one of nature’s beautiful and highly nutritious berries. In this recipe they add a lovely tang which compliments the slight sweetness in the cookie. The coconut and cacao butter make it extra special.

Goldenberries are one of nature’s beautiful and highly nutritious berries. In this recipe they add a lovely tang which compliments the slight sweetness in the cookie. The coconut and cacao butter make it extra special.

Ingredients

1/2 cup Tigernut Flour

1/2 cups Tigernut Flakes

1/2 cup dessicated coconut

1/2 cup Goldenberries or Crunchy Goldenberries

1/2 cup sliced pitted dates

1/2 cup walnut pieces
-
1/2 cup Coconut Sugar
-
1 tsp vanilla extract or 1 large squirt liquid vanilla stevia

Zest from 1/2 orange
-
2 tbsp melted Cacao Butter
-
1/3 cup thick coconut or oat milk
Directions
Preheat oven or 180℃ if using an oven. Alternately I cook these in my airfryer.
Add everything up to the orange zest to a large mixing bowl then stir to combine.
Melt the cocoa butter in a small fry pan on medium then add to the dry mix with the milk and stir to create a thick dough.
Roll a small palm full of mix into a ball then flatten slightly and place onto the baking paper lined tray.
Repeat until you use all the mix then bake in the centre of the oven for about 13-14 minutes or until light browned or cook in an air-fryer for 7 minutes or until lightly browned and cooked through.
Allow to cool before enjoying.
