MACAdamia Caramel Slice

Ingredients

    • 3/4 cup buckinis (buckwheat groats)

    • 1/4 cup sunflower seeds

    • 1/2 cup shredded coconut

    • 6 medjool dates

    • 1 tbsp coconut oil 

    • 1 tsp cinnamon

    • 1/4 tsp salt

    • 1 cup macadamias (soaked for 3-6 hours)

    • 1/3 cup coconut cream

    • 1/4 cup cashew butter

    • 1/4 cup filtered water

    • 2 tbsp coconut oil melted

    • 3 medjool dates

    • 2 tbsp maple syrup

    • 1 tbsp hulled tahini

    • 1/2 tbsp Maca Powder

    • 1 tsp vanilla paste or extract

    • 1 tsp salt

    • 1/3 cup smooth cashew butter

    • 1/3 cup coconut cream

    • 1/3 cup Cacao Powder

    • 2-3 tbsp maple syrup 

    • 1 & 1/2 tbsp coconut oil 

    Directions

    1. Place all ingredients for the base in a high power blender and blend until smooth

    2. Press mixture into a greased and lined baking tray and set aside while you prepare the filling

    3. Drain and rinse the macadamias and place in the blender. Add all remaining filling ingredients and blend until smooth

    4. Spread evenly on top of the base

    5. Place in freezer for 1-2 hours until set

    6. Combine all chocolate ingredients in a mixing bowl and mix until smooth. Spoon on top of the caramel.

    7. Allow to set for another 1-2 hours in the freezer then place in the fridge for at least an hour before serving.
