These puffy wuffy choccy wokky clusters are quick to whip up for a delicious healthy afternoon snack or breakfast bowl addition. With cacao paste, cacao butter and cacao nibs they're a triple choc taste and texture sensation.
Power Super Foods
½ cup almonds
¼ tsp good quality salt
35 g Cacao Paste (or 6 buttons)
40g Cacao Butter
2 tbsp maple syrup
¼ tsp vanilla
¼ cup almond butter
1 cup quinoa, rice, millet or buckwheat puffs
1 tbsp Lucuma Cacao Nibs or Cacao Crunch or raw Nibs
Lightly roast almonds in a 170 C oven on a lined baking tray for around 10-12 minutes
Allow to cool and roughly chop
Add salt and puffs
Chop Cacao Butter to allow it to melt evenly – this prevents overheating and high temperatures that might destroy the powerful antioxidants
Melt Cacao Paste Buttons gently over a double boiler of simmering water. Do not overheat to ensure the nutritious cacao goodness is retained.
Once they start to melt add the Cacao Butter and a pinch of salt (salt balances out chocolate flavour compounds)
Remove from heat before the butter begins to melt and stir or whisk until fully melted together. This luscious glossy liquid can also be used to make home made chocolate.
Add maple syrup and vanilla
Wipe water from base of bowl to avoid water getting into the chocolate mixture
Mix together the melted chocolate with puffs and chopped nuts
Add almond butter and Lucuma Cacao Nibs and mix together well
Roughly form clusters of the mixture on baking paper – wet hands will help as it can get sticky.
Refrigerate until set – around 30 minutes
Best eaten immediately or store for up to a week in an airtight container.
