Start the day with these grab n go tigernut breakfast cookies! Healthy enough for breakfast or a snack but delicious enough for dessert, they’re naturally gluten free, packed with protein and fibre and utterly delicious. For the (optional but essential!) chocolate chips, use either chopped ceremonial cacao paste or dark chocolate (if you prefer a bit of sugar)

Start the day with these grab n go tigernut breakfast cookies! Healthy enough for breakfast or a snack but delicious enough for dessert, they’re naturally gluten free, packed with protein and fibre and utterly delicious. For the (optional but essential!) chocolate chips, use either chopped ceremonial cacao paste or dark chocolate (if you prefer a bit of sugar)
3 ripe bananas
1 Tbs brown rice syrup
1/2 cup almond butter
1 cup Tigernut Flour
1 cup almond meal
1/4 cup hemp seeds
1/4 cup Power Super Foods Cacao Nibs or Cacao Crunch
1/4 cup chopped Power Super Foods Cacao Paste or chopped dark chocolate pieces
Preheat oven to 180 degrees C
Mash banana in a large bowl, then mix in brown rice syrup and peanut butter until well combined.
Add the Tigernut Flour and almond meal to the mixture and combine well.
Add in the hemp seeds, Cacao Nibs and chopped dark chocolate and fold through.
Roll into balls and place onto a lined baking tray and flatten using your hands or a spoon
Bake for 15-20 minutes or until lightly golden brown.
Let cookies cool for 5 minutes and enjoy!
Store in an airtight container in the fridge or freezer.
