Power Super Foods
1 cup gluten-free flour
1 tsp Power Super Foods Red Maca Powder
1 tsp baking powder
1 tsp baking soda
A pinch of salt
¾ cup almond milk
2 tbsp maple syrup
1 tbsp apple cider vinegar
1 tsp vanilla essence
1 tbsp olive oil (and extra for cooking the pancakes)
Sprinkle of Cacao Nibs
In a medium-sized bowl, whisk together the flour, Power Superfoods Maca Powder, baking powder, baking soda and salt. Set aside.
In a measuring jug or small bowl, whisk together the almond milk, maple syrup, apple cider vinegar, vanilla essence and tablespoon of olive oil. Set aside for a minimum of 2 minutes, this will turn into a vegan ‘buttermilk’.
Slowly add the ‘buttermilk’ mixture into the bowl of dry ingredients, folding through gently and avoiding overmixing. There will be a few clumps remaining in the batter and this is okay!
Over low-medium heat, using the extra olive oil, pour around ¼ cup of the batter into a frying pan and cook the pancakes for approximately 2 minutes on each side. You will know the pancake is ready to flip as little bubbles will appear on the surface. Repeat this process for the remaining batter.
Serve immediately with your choice of toppings such as coconut yoghurt, fresh fruit, extra maple syrup and Power Superfoods Cocao Nibs. Dig in and enjoy!

Feel free to use a different oil to olive oil, coconut oil works well in this recipe too adding an extra note of sweetness.
