Power Super Foods
½ red onion, thinly sliced
1 tbsp rice vinegar
2 salmon fillets, skin removed and cut into cubes
2 garlic cloves
1 tbsp soy sauce (or tamari)
1 tsp sesame seeds
1 tsp sesame oil
½ tsp Power Super Foods Coconut Sugar
2 tsp rice vinegar
1 tsp Power Super Foods Coconut Sugar
Pinch of salt & pepper
1 cup cooked white rice
½ avocado, sliced
½ cup edamame beans
1 Lebanese cucumber, sliced
1 carrot, peeled into ribbons
¼ tsp sesame seeds
2 tsp Power Super Foods Nori Flakes
2 tsp siracha, optional
2 tsp mayonnaise, optional
Place red onion and rice vinegar in a small bowl and set aside, allowing to pickle.
Combine salmon, garlic, soy sauce, sesame seeds, sesame oil and coconut sugar in a bowl.
Drizzle a small frying pan with oil and bring to a medium heat.
Add salmon or Tofu, cooked to your liking.
Meanwhile, combine rice vinegar, coconut sugar salt and pepper in a small bowl.
Pour over cooked rice and stir to coat.
Place rice in a bowl and top with avocado, edamame beans, cucumber, carrot, sesame seeds, Nori Flakes, siracha and mayonnaise. Add pickled red onion and cooked salmon.
