Chia isn’t just for smoothies. These roasted cauliflower buns are a delicious way to include more chia in your diet and can be enjoyed on their own or as a side dish.

2 x tbs Power Super Foods Organic Chia Seeds ground
1/2 head cauliflower (about 600g)
1/4 cup almond meal
2 tbs nutritional yeast
1 tbs psyllium husk
1/2 tsp garlic powder
1 tsp dried oregano
Salt and pepper
Toppings to taste
Preheat oven to 200C.
First make the chia eggs - grind 2 tablespoons chia seeds and add to 6 tablespoons water, stir to combine and let sit for 10-15 minutes.
Next chop cauliflower roughly and process in the food processor into a fine grain consistency.
Transfer to a bowl and add all other dry ingredients and stir to combine.
Stir through the chia egg and stir to combine into a doughy mixture.
Divide the dough into about 6 parts and roll them into balls and place on a parchment lines baking sheet.
Sprinkle with your favourite toppings - I used black sesame and chilli flakes / turmeric, dukkah and sesame seeds
Bake on a parchment lined baking tray for 20-25 minutes.
Amazing eaten warm with soup!
