White Chocolate Coconut Truffles
Dreaming of a white Christmas? Our version of white chocolate swaps the refined white sugars and dairy and uses heavenly organic cacao butter blended with coconut cream then rolled in coconut. These four ingredient delicious vegan truffles are also nut and gluten free.

Ingredients
- 1 to 1 and 1/2 cups of desiccated coconut (add the extra 1/2 cup in only if the mix seems too runny to form balls)
- 1/2 cup gently melted Power Super Foods Cacao Butter (double boiler method)
- 1 cup coconut cream from a can – firm part after refrigeration
- 1/2 cup pure maple syrup
- Optional – ½ tsp vanilla powder or essence
Directions
Place all ingredients into a food processor until well combined.
If the mixture is a little too runny, place into freezer for 30 – 60 mins to harder a little. (different coconut creams can have different textures)
Roll the truffle mix into equal sized balls.
Roll into a small amount of extra desiccated coconut.
Store in the fridge until ready to eat/serve.
