A festive slice to cherry-ish at Christmas and beyond. This easy to make, healthy and delicious dessert slice is made with our favourite superseeds to bring the festive chiar. We’ve also added some sneaky veg- Beetroot Powder for a burst of colour and nutrition.
2 cups shredded coconut
1/4 cup brown rice syrup
4 Tbs coconut milk
2 Tbs coconut oil (melted)
1/2 tsp pure vanilla extract
pinch of sea salt
1 cup frozen cherries
¼ cup filtered water
2 tbs Power Super Foods Chia Seeds
1/4 cup brown rice syrup
4 Tbs freshly squeezed orange juice
1 tsp Power Super Foods Beetroot Powder
½ tsp cinnamon powder
Add ingredients into a food processor and process until well combined
Line a medium sized square container with baking paper, then spoon in the mixture, distributing evenly and press down firmly with a spatula.
Put into the freezer for at least 20min (or until it becomes firm) before pouring the cherry topping on top.
Put the frozen cherries into a small saucepan and add the water. As it heats use a wooden spoon or potato masher to break down the cherries. Bring to the boil over medium-high heat for a few minutes then reduce the heat to a simmer for another 5 minutes until the mixture thickens.
Take the saucepan off the heat and add the brown rice syrup, Chia Seeds, orange juice, orange zest, Beetroot Powder and cinnamon. Stir the mixture until well combined. Let it cool down to room temperature or pop in freezer or fridge to cool faster for a few minutes.
Lastly, pour the cooled cherry sauce on top of the base and put into freezer for about 2 hours to set.
Slice into squares and enjoy!
Store in the fridge for 4-5 days or in the freezer for about 3 months.
