Power Super Foods
These cacao, goji, pistachio & almond balls are a bit nutty, a bit zesty, full of all the good stuff and very moreish. Perfect for a home or walking snack.
1 cup oat flour or ground oats
1 jar @99th_monkey Pistachio and Almond butter
1/4 cup pure maple syrup
1/2 tsp vanilla extract
1/4 tsp sea salt
3 Tbs Power Super Foods Nibs or Cacao Crunch
2 or 3 Tbs Power Super Foods Cacao Powder
1/4 cup Power Super Foods Goji Berries
1/4 cup dessicated coconut
zest 1/2 organic lemon
Optional - handful of pistachio nuts for extra crunch
2tbsp Chia Seeds
Soak dried goji berries in boiling water for 15 mins, drain and squeeze excess moisture
Combine all ingredients in a food processor, pulse until blended, then roll into bite sized balls.
Roly poly your balls some more in dessicated coconut, ground Nibs or PSF Cacao Crunch or leave as is, all shiny and naked.
