Lucuma Peanut Butter Fudge

Made with Lucuma Powder and a smidge of maple syrup for additional sweetness, this simple recipe makes a delicious low sugar treat for fudge fans. Our raw Lucuma Powder comes from the lucuma berry grown organically in Peru and gently dried into a powder with nothing else added. Lucuma Powder is a natural low GI sweetener and contains carbs, vitamins and minerals . Unlike sugar and many other sweeteners lucuma has slow absorption for sustained energy.

Lucuma Peanut Butter Fudge

Ingredients

  • 70g Power Super Foods Cacao Butter

  • 1 and ½ cups Smooth Peanut Butter (no added salt or oils)

  • Handful Power Super Foods Lucuma Cacao Nibs

  • 4 tbsp Power Super Foods Lucuma Powder

  • 3 tbsp maple Syrup (more can be added if you prefer it sweeter)

  • 1 tsp pure vanilla extract

  • Pinch of quality flaky salt

Directions

  1. Chop Power Super Foods Cacao Butter for even melting.

  2. Gently heat Cacao Butter in a bowl over simmering water

  3. Stir in Lucuma Powder, peanut butter, maple syrup, vanilla and salt

  4. Pour into a lined tin and scatter with Lucuma Cacao Nibs and an additional pinch of salt

  5. Refrigerate until set (around 2 hours)

  6. Slice up and enjoy. Fudge can be stored in fridge or freezer.
