Ingredients

Chocolate Walnut Base

1 cup dessicated coconut
1/2 cup walnuts
5 medjool dates
3 tbs coconut oil
1 Tbsp Power Super Foods Cacao Powder
pinch of salt

Silky Vegan Cheesecake Filling

2 cups of cashews soaked for a minimum of 4 hours
1/2 cup coconut milk
1/4 cup coconut oil
1/3 cup maple syrup or liquid sweetener of choice
1 tsp vanilla
1/4 cup lemon juice or to taste
3 Tbsp Power Super Foods Maqui Powder
3 Tbsp Power Super Foods Acai Powder
Optional additional berry boost : 1 Tbsp of fresh or frozen organic blueberries or blackberries

Directions

Pulse crust ingredients until a sticky dough forms that still has some textured bits. If its too wet add more dry ingredients until the desired texture is achieved.
Press into a lined tin or if making as a round cake use a springform pan
Blend filling ingredients in a processor for about 2 minutes until very smooth. Poor onto crust in tin.
Set in freezer for a few hours. Serve at room temperature or slightly cool. Cut with a hot knife. Can be kept in fridge but will last longer in the freezer.
