Traditionally known in Spain as Horchata de Chufa, making it with flakes (or tigernut flour) instead of whole tigernuts is incredibly quick because the flakes blend smoothly without needing a 24-hour soak!
1. Add 1 cup of Tigernut Flakes and 3 to 4 cups of filtered water to a high-speed blender.
2. (Optional) Toss in a pitted date for extra sweetness and a pinch of cinnamon.
3. Blend on high for 1 to 2 minutes until completely smooth and milky.
4. Strain the liquid through a nut milk bag or a fine-mesh strainer into a sterilised glass jar.
The result is a naturally sweet, rich, and creamy allergen-free milk that is perfect for splashing into tea, pouring over cereal, or drinking chilled all on its own. It’s also delicious with cacao as a hot or cold chocolate drink and no sweetener is required!
Don't Toss the Pulp!
The best part about making your own tigernut milk is that you get a "two-for-one" ingredient. The leftover pulp inside your nut milk bag is incredibly rich in prebiotic fiber. Instead of throwing it away, you can:

Spread the mixture on a baking sheet and bake at 150°C (300°F) for 15–20 minutes, stirring halfway through, until golden brown and fragrant. It cools into an incredibly crunchy, naturally sweet granola. Store in an air-tight jar.
