Chocolate & Acai Berry Tarts

There's layer upon layer or deliciousness in these gooey and delectable Chocolate Acai Berry Tarts. With a base of crunchy almonds, cacao nibs and cacao butter, a creamy banana honeycomb centre and a luscious layer of cherries, Acai and Cacao Crunch on the top.

Chocolate Acai Berry Tarts

Ingredients

    • 1 cup pitted dates

    • 1/2 cup salted and roasted almonds 

    •  1/2 cup almond meal 

    • 1 Tbs raw Cacao Nibs

    • 1 Tbs raw Cacao Butter
    • 1 squirt caramel liquid stevia

    • 1 cup raw cashews 

    • 1 cup pitted dates 

    •  3/4 cup water

    • 1 banana (1/2 whole, 1/2 peeled)

    • 2 squirt vanilla stevia or 1 tsp vanilla extract

    • 2 heaped tbs honeycomb or vanilla pea protein powder

    • 2 tbs shaved raw cacao butter

    • 2 heaped Tbs Acai Berry Powder



    • 2 tbs rice syrup or maple syrup

    • 2 tbs honeycomb or vanilla pea protein powder

    • 12 large frozen cherries

    • 2-3 tbs Cacao Crunch for decoration

    Directions

    1. Place all ingredients into a blender or food processor and gently process until the mixture gets sticky but still has structure.



    2. Press 2 tbs each into a 6 muffin pan or press the lot into a medium sized removable bottomed tart pan.

       

    3. Place into the freezer or fridge to firm up

    1. Soak dates and cashews in the water for 2-3 hours or overnight.

    1. Place all of the ingredients except the protein powder into a high speed blender and blend until super smooth and creamy. This can take a while and you will need the tamper to help move the mix through the blades so as not to overheat the motor.

    2. Once you have the mixture super smooth add the protein powder and blend through for about a minute or two on high speed.

    3. Spoon 1 1/2 to 2 tbs onto each of the bases or place a 1 1/2 cm layer onto the medium round base, you should have about 1/3 - 1/2 of the mix left over for the next layer.

    1. Add all of the ingredients for the cherry Acai layer to the left overs from the honeycomb layer and blend until smooth

    2. Pace the mixture into a piping bag and allow to cool before piping onto the tarts.

      Alternatively you can spoon the mixture onto the honeycomb mixture and gently smooth out the top.

    3. Decorate with Power Super Foods Cacao Crunch and sprinkles of desiccated coconut.
